Overview
A project dedicated to the production and processing of sweet potato, especially into flour. It aims to add value to this crop, diversify locally produced foods and open up new commercial opportunities.
Background and rationale
Sweet potato is widely grown by rural women. Usually sold raw, it earns little and suffers post-harvest losses. Processing it into flour and derived products keeps the harvest longer and generates more income.
Problem addressed
Low added value, post-harvest losses and limited access to processing equipment and markets.
